Penne with squid and pistachios
Ingredients (serves 1)
  • 80 g penne pasta
  • 1 squid (clean)
  • 1 onion
  • 1 carrot
  • 50 g frozen peas
  • 20 g tomato paste
  • 1 piece of red pepper
  • 20 g roasted pistachios
  • ½ garlic clove
  • Lemon
  • Parsley
  • Bay leaf
  • Extra virgin olive oil
  • Pepper
  • Water
Method
  • 1. Peel and chop the onion and carrot. Wash and cut the squid into small pieces.
  • 2. In a wide pan, sauté the squid and vegetables with a dash of olive oil and add the bay leaf. Cook for ten to twelve minutes over medium heat.
  • 3. Add the peas and tomato paste, stir. Add the pasta, sauté for one minute and pour in the same volume of hot water as pasta (you can use the same cup used to measure the pasta to fill it up with water and heat in the microwave at maximum power).
  • 4. Stir, cover, and cook the pasta over low heat for the time indicated on the pasta package.
  • 5. Peel the pistachios and garlic. Crush them with a mortar and pestle together with a few parsley leaves and a squeeze of lemon juice.
  • 6. Once the pasta is cooked, add the chopped pistachios on top and serve.
